Lazy Pasta

Today was a bad day. I dont want to go too far into it, but I had an early drinking kind of day. Also, our electric in the house has been on and off for about a week, and that sucks. So for dinner tonight I was going to make braised duck leg, (Because OF COURSE Bryon and Marshall have duck legs just laying around!) But with my electricity being bi-polar, I opted to make lazy spaghetti tonight.

Of course speghetti for us is never just sauce and speghetti. No, it has to be my French style sauce that is my own creation that takes 3 hours to make (I am not sharing the recipe right now. You can’t have it!). It also involved italian sausage that I sauted with duck fat (see above) and basil from the garden. Just normal spaghetti, nothing special!

I will give you this pro-tip that I use with all pasta now; In a mixing bowl add olive oil and fresh chopped basil (About 4 leaves). When the pasta is done, drain it then add it to the oil and toss. Wait about two mintes and toss again, then plate. It will change your pasta world forever!

Sometimes simple food can be intimate and special. This was the case for us tonight.

Tomorrow I braise duck legs, and begin prepping for Coq Au Vin. I also have new AirBnB guests coming on Friday, so cleaning that room will happen as well.
